Zhi Mei Zhai's specialties include the "Four-part Fish Dish": a live fish, divided into several parts and cooked four different ways, ineluding red-cooked fish head, sweet and sour fish chunks, fish in special sauce, and fermented fish pieces. The red—cooked fish head is fresh but not fishy - an enchanting dish that will make your taste buds rejoice. The sweet and sour fish chunks are cut into sweet, tasty squares resembling tiles;
the fish in special sauce uses the best, richest fish meat, sprinkled with their special sauce, bright and shining, with a gloriously rich flavor. The fermented fish pieces are pure white with a very particular aroma - the first time you eat them you may find their flavor a bit odd, but after several bites, you will feel that the more you eat, the better they taste, compelling you to gobble them up! The master chefs here also create a special assorted fish soup using the meat and organs from the fish abdomen. Adding a splash of vinegar and a sprinkle of black pepper, it
