The roasted ducks are a deep reddish brown and have a glossy silk—like slon that will rouse the appetite of all those who set eyes on them. The skin is tender and crisp, exquisite and tasty. Quan Ju De maintains rigid standards for selecting birds. After the ducks are plucked, a small hole is carved near the right wing and the bird is gutted and rinsed with fresh water Once the skin is air-dried, the bird is filled with clear stock, and the hole is closed with a silk thread and roasted once more.
