A typical dish with standard flavors has been transformed into a culinary masterpiece with rich yet simple undertones in Mesa's beef carpaccio. Shimmering slices of the meat are served with pesto, a fine parmesan, and a tasty spread of goat cheese. Magnificent stuff. Salmon and king-crab cake features generous, delicate chunks with a sour-sweet tropical salad on top. The ultimate comfort food of pea soup is finished with crisp Parma ham and a bit of butter. Mesa's pan-seared foie gras has an eclectic content of ingredients, including white chocolate, watercress and a very fine red-wine jus. Sea bass comes on a bed of very buttery risotto, enhanced by a pool of brilliant beet juice and topped with chorizo. Roast lamb rump was served in several fat slices, all with a rosy pink center, though the accompanying garlic creamed mash is the savory star of this dish. Every Mesa offering gives attention to combinations of flavor, balance, and color, making plating simple?An outstanding flourless chocolate cake proves "there’'s always room for dessert".
